How to dry pitaya?

Pitaya is rich in fiber and is a natural snack food. The Baixin pitaya dryer can be divided into multiple drying stages, and the fresh pitaya is dried at a medium and low temperature so that the drying effect of Pitaya is better. Dried pitaya will not change any of its nutritional value. The aroma of Pitaya remains and tastes better.

Wash and slice pitaya: Fresh and disease-free pitaya fruit was selected for cleaning and peeling. The thickness of Pitaya slices is 0.6-1 cm.

Color protection of Pitaya slices: Put pitaya slices into citric acid solution to prevent discoloration and reduce the loss of vitamin C.

Blanching of Pitaya slices: Put pitaya slices into 90 ℃ - 100 ℃ water and scald for 3-5 minutes, then rinse and cool in clean water.

Drying of Pitaya slices: Put the Pitaya slices in the tray and put the tray into the drying room. Set the drying temperature in the drying room to 60 ℃; The dry humidity is 10%. The drying time is 10-15 hours.

Different pitaya thickness will have different dehydration time. The thinner the pitaya, the shorter the dehydration time. Dried pitaya slices will regain moisture when in direct contact with air, so they need to be sealed. If you use vacuum packaging, you can better preserve the color and aroma of Pitaya slices.
