How to dry ginger?

Ginger has a pungent smell and is widely used. It can be eaten or used as a seasoning, and can also be used as a medicine. Fresh ginger cannot be stored for a long time, but if the ginger is stored dry, it will not only facilitate the collection but also greatly extend the storage time. Baixin ginger dryer can be divided into multiple stages to dry fresh ginger at low and medium temperatures so that ginger can be dried better. Dried ginger will not change any of its nutritional value. The scent of ginger is preserved and the taste is better.

Wash the ginger and remove the soil on the surface. If the output is large, it is recommended to use a professional ginger cleaning machine to complete.

To slice ginger, it is recommended to use a ginger slicer. The thickness of the slice is adjustable and the slice is even.

Put the ginger slices into the dryer. Dryer set temperature: 63℃, set relative humidity: 10%.
Different slice thickness, different drying time:
1.5mm thick slices: dry for about 2 hours;
2.5mm thick slices: dry for about 3 hours;
Slices with a thickness greater than 3mm: dry for about 4 hours;
Other large-size ginger slices: Some take about 5 hours to dry, while other thicker ginger slices may take longer.If you use a ginger mesh belt dryer, the drying time is 0.5h-2h.

The steamed ginger slices will keep the golden yellow color, with higher hardness, and more crisp. Normally, The steamed ginger will be drying fast than without steamed one. It is one kind of deactivation of enzymes processing method. The dried ginger slices will regain moisture when they are in direct contact with the air, so a sealed package is required. If you use vacuum packaging, you can better preserve the color and aroma of ginger slices.
