Fast-drying will destroy the drying quality of the fish, so it needs to be divided into multiple drying stages and a longer drying time. The first stage: Set the temperature at 15°C, and dry for 10 hours to shrink the fish and remove part of the water.

The second stage: Set the temperature to 45°C, and the drying time is 10 hours, to start the powerful drying process.

The third stage: low temperature to 15 ℃, drying for 6-8 hours, in this process, the water inside the fish can be released to the surface.
